Tequila Abby

Farmhouse raw milk pressed cheese with an earthy, rustic flavor.  Aged a minimum of 60 days washed twice weekly with tequila and chipotle giving the rind a reddish mottled look.

This unique custom made wood box is available at Stanley Korshak in Dallas and Malouf's in Lubbock. The box is designed like an old pencil box. The lid, which is a cutting board, slides out for your serving pleasure. Under the lid, lies a knife, engraved with our name to make your service complete. Twist the top, and, voila, there is cheese beneath. A very special gift that will last forever (except for the cheese).

An ancient type of goat's milk cheese with a new twist...rather than being pierced down the center with a straw, we use a stem of rosemary. The paste goes from semi-soft and moist when fresh to a drier and nuttier flavor as they age. A beautiful cheese for a cheese board.

Goes well with a dry crisp wine such as a California Chardonnay or a Sauvignon Blanc.

A triple crème cheese named after my favorite pastry chef. This cheese is hand made even in the molding process. A sprinkling of ash comes through the mold ripened rind at just the right age.
