Cheese Making Class

If you appreciate the flavors and complexities of small batch cheese please join us for a unique cheese making experience. Co-owner and cheesemaker, Jeff Vanderbilt and cheesemaker Hayden Wolf will share their knowledge, and you will participate in the cheese-making process. This weekend class is limited to 10 participants so there will be plenty of one-on-one attention and time to ask questions. Not only will you make cheese to take home, you will also enjoy a variety of delicious cheese pairings during your class. We look forward to sharing our passion for cheesemaking and helping you to discover your inner fromager.

In addition to learning how to make amazing tasting cheese, each participant will receive a take home package that includes the cheese you make (of course!) and a commemorative apron.

The class will be making three different types of cheese:

• Fresh – Fromage Blanc
• Bloomy rind – Chaource (Buttercup)
• Aged – Gouda

Friday, Feb 4, 2022

5:00 pm

• Arrival meet and greet

5:15 – 6:00 pm

• Orientation for dairy

• Add cultures and rennet to pasteurized milk for: Fromage Blanc; Chaource (Buttercup)

6:00 pm

• Cheese and charcuterie board with refreshments

• Adjourn

Dinner on your own

Saturday, Feb 5, 2022

8:00 am

Breakfast:
• Quark; Czech savory rolls; Coffee

8:45 am

• Scoop Fromage Blanc into bags

• Begin Gouda

• Scoop Chaource

Lunch:
• Grilled HGC Gouda

• Continue Gouda to wheels

• Transfer Chaource to molds

5:00 pm

Dinner:
• Cheese board with refreshments
• Crust and Crumb pizza and salad

• Adjourn

Breakfast:
• Bagels with goat cheese; Coffee

• Blend Fromage flavors; package

• Round Gouda wheels

• Salt Chaource
